  • 2 lbs 900 g Yukon Gold or Russet potatoes, peeled and cut
  • 1 whole garlic bulb
  • 4 tablespoons unsalted butter
  • ¾ cup warm heavy cream or whole milk
  • ¾ cup freshly grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: chopped parsley or chives for garnish

Method
 

Step 1: Roast the Garlic
  1. Preheat your oven to 200°C (400°F). Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool slightly.

  1. Peel and cut potatoes into equal chunks. Place in a large pot of salted water and boil for 15–20 minutes until fork-tender.

  1. Drain potatoes thoroughly and return them to the hot pot. Let them sit for 1–2 minutes to release excess moisture.

  1. Mash the potatoes gently using a masher or ricer. Avoid overworking them.

  1. Squeeze roasted garlic cloves into the potatoes. Add butter and warm cream, stirring until smooth.
